Fiber-ous Buns

prep. time: 12 min. sit time: 1 hour bake time: 25 min total time: 137 min. servings: 60

instructions:

1.warm the water in the microwave

2.pour 1/2 cup of the water into a separate bowl

3.incorporate the yeast and honey. let this sit for at least 10 min.

4.into a separate bowl, pour the remaining water and add the psyllium husk. stir it well. let it sit for at least 5 min.

5.in a mixing bowl, add the flours, flaxseed, baking powder, and salt

6.mix the psyllium husk in with the contents of the mixing bowl

7.add the yeast. be careful not to over mix.

8.cover the bowl and let the dough sit for an hour.

9.divide the dough into 12 buns. roll each bun and squish it a tad into a bun shape

10.bake for 25 min.

ingredients:

2 cups of water

12g of instant yeast

1 tsp. honey

42g of psyllium husk

225g of sorghum flour, or quinoa flour

1 cup of chickpea flour

70g of ground flaxseed

1.5 tsp baking powder

2 tsp salt
