V. Wafers

prep. time: 12 min. bake time: 10 min. total time: 22 min. servings: 60

Instructions:

1.preheat the oven to 325 degrees. Line baking sheets with parchment paper.

2.combine flour, baking powder, baking soda and salt in a small bowl. whisk together until mixed.

3.in a separate bowl, add sugar and butter. beat until it is fluffy and light in color (in about 3 min.)

4.add the egg whites and vanilla. beat until smooth

5.slowly sift the flour et al. into the fluffy mix

6.add 1 tbs of milk. stir until it is mixed in. if the batter is not soft (the consistency of peanut butter) add the second tbs of milk

7.fill a piping bag with the dough

8.squeeze dough out of piping bag onto parchment paper-ed pan, creating a dot the size of a quarter

9.continue doing so with all dough, spacing the dollops 1 inch apart

10.bake in the oven for 10-12 min until the cookies are golden or brown (depending on your chewy/crunchy preference)

Ingredients:

2/3 cup of gluten free flour (I used Redmill’s All-Purpose)

1/2 teaspoon of baking powder

1/8 teaspoon of baking soda

1/2 teaspoon of salt

3/4 cup of granulated sugar

1/2 cup of salted butter (at room temp.)

2 egg whites (2.5 tbs. of egg white liquid)

1 tbs. of pure vanilla extract

1-2 tbs. of milk
